Sheetpan Chicken Kababs
This recipe is a Hello Pause adaptation of Nicole Maguire's "Juicy Oven-Baked Chicken Kebabs" from Simple Home Edit (simplehomeedit.com). All credit to Nicole for the original recipe, which has been on repeat in my house all summer — I have made a few intentional swaps here to lean into the balance Hello Pause is built on.
Why I love this meal
It's a quick, easy crowd-pleaser. Ground chicken is a naturally high-protein base, and the whole thing comes together in about 35 minutes. I just nudged a few ingredients to make it more supportive of this stage of life — a little lighter, with a boost of protein and fibre.
Three simple swaps, and why they matter
● Whole wheat pita instead of regular flatbread. Same warm, foldable vehicle for your kebab — just with more fibre along for the ride. Fibre supports steady blood sugar and gut health, which matters more, not less, during this transition.
● A yogurt-forward sauce — 3/4 Greek yogurt to 1/4 mayonnaise, instead of a 50/50 split. You still get that creamy, garlicky sauce everyone fights over, with a bit more protein doing the work and a little less saturated fat along for the ride.
● A bruschetta-mix shortcut for the tomato salad. Some nights you have ten minutes, not twenty. A good store-bought bruschetta mix (drained well) gets you the same fresh, tangy contrast to the warm chicken without the extra chopping.
None of these swaps changes what makes this dish work — they just shift the balance a little further toward what your body is asking for right now. That's the whole idea behind "eat better, not less": small, sustainable choices, not a longer list of rules.
The Recipe
Serves 6 · Prep 10 minutes · Cook 25 minutes
Chicken Kebab Mixture
1 kg (2¼ lb) ground chicken
1 brown onion, grated
2 tbsp minced garlic
2 tbsp tomato paste
2tbsp sweet paprika
2 tbsp dried cumin
1 tbsp dried oregano
2 tsp sea salt flakes
2 tsp freshly cracked black pepper
¼ cup finely chopped fresh cilantro (or flat-leaf parsley or both )
Olive oil, for brushing
Balanced Yogurt Sauce
150 g (¾ of the mix) plain Greek yogurt
50 g (¼ of the mix) mayonnaise
2 garlic cloves, finely minced
juice of one lemon + tablespoon of lemon rind
1 tbsp olive oil
½ tsp sea salt flakes
Tomato Salad
200 g cherry tomatoes, quartered — or 1 cup store-bought bruschetta mix, well drained
2 tbsp finely chopped flat-leaf parsley
1 tbsp olive oil
1 tbsp lemon juice
Pinch of sea salt flakes
Quick Pickled Onions
large red onion sliced thin
¼ cup vinegar (red wine, apple cider, rice wine, white - any will do)
½ cup water
2 tsp sumac
1 tbsp sugar
To Serve
● 6 whole wheat pitas, warmed
● Hummus
● Lemon wedges
Instructions
Preheat. Preheat the oven to 240°C (475°F), or 220°C (425°F) fan-forced. Line a large baking tray with parchment paper.
Mix. Combine all the chicken kebab ingredients (except the olive oil for brushing) in a large bowl. Mix until just combined — overmixing can make the chicken tough.
. Shape. Press the mixture onto the tray into a rectangle roughly 28 x 20 cm (11 x 8 in), about 1.5–2 cm thick. Smooth the surface with damp hands.
Score. Score the mixture into kebab-style strips without cutting all the way through, then brush lightly with olive oil.
Bake. Bake on the top rack for 22–25 minutes, until golden and cooked through, checking from the 18-minute mark. If liquid pools on the tray, carefully drain it off partway through so the edges caramelize.
Quick Pickled onions. Slice onion thinly mix the water, vinegar, sumac and sugar together, pour over onions (tip: double the recipe and keep in the fridge up to one week delicious on salads, sandwhiches and as a side)
Make the sauce. Whisk together the Greek yogurt, mayonnaise, garlic, lemon juice, olive oil, and salt. The 3:1 yogurt-to-mayo ratio keeps it creamy while adding a protein boost.
Make the salad. Chop and toss the tomatoes, parsley, , olive oil, lemon juice, and salt - Or drain premixed brushetta mix (I use the costco one - great to have on hand for quick dinners)
Warm the pitas. Warm the whole wheat pitas in a dry pan or over a flame, about 30 seconds per side.
. Assemble. Slice the chicken along the scored lines and pile into the warm pitas with the yogurt sauce and tomato salad. Serve with lemon wedges and hummus, if using.
